The agricultural holding Cannata Vincenza is specialized into animal rearing for meat production since 1981; it is located on the surrounding hills of The County of Modica, an environment where pasture land is almost green all over the year and where air is particularly pure. Our goal has always been to produce the best quality meat applying the ancient knowledge of the population of Modica. Actually there is no family in this territory that doesn’t have at least a small herd. We so decided to join together the “ancient knowledge” to the entrepreneurial will of our family, thus following our real and best passion for this craft. The holding furthermore has big structures, storage facilities, stables and wide pasture lands. The holding has so become the more and more a reference for the professionals of farming who recognised us the quality of rearing and the seriousness of our management; nowadays we hold a leading edge company in the local market.
We choose the limousin race because of its remarkable adaptability to different environments, its quality by weight, its capability to calve with no particular assistance, in order to respect nature’s birth balance, its resistance to diseases, thus avoiding continuous pharmacological treatments affecting inevitably the quality of meat. As said before, the holding bought a small herd directly in France, where this race is native, and obtained its immediate adaptation to the Sicilian clime environment. A bull with pedigree followed the small herd thus aiming to ensure the covering and the genetic continuity of the distinguishing production of our holding. However we also have recourse to artificial insemination using the seed of other bulls of superior genealogy belonging to the same race, thus guaranteeing the best genetic quality. As a result of this process, we shortly established a closed loop farming, which is to say to have in the same farm the breeding cow, the calf for meat production and the heifer; for its good qualities allow to introduce it into the production both as breeding cow or in case of overproduction for sale to other cattlemen aiming to improve their stables (there is no more external purchase). Moreover, this process guarantees a major sanitary safety of our livestock population, for no external livestock would be bought and no sanitary controls would be conduct from third parties. For these reasons we choose to follow the inner turnover technique, at a rate of 5% per year. (Closed cycle).
The alimentation is entirely of vegetal origin: hay, straw, “silage” and pasture grass with little integration of concentrated feedstuff of vegetal origins produced in the lands of the holding and studied by our specialized technician Dr. Candido Orazio. The breeding cows and their babies go to the pasture between November and May with a little integration in the stable. In the fattening stables we feed animals with a mixture of lolium multiflorum hay and vegetal feedstuff.
Controls are rigid and occur daily with careful exam of each head of cattle. Thanks to its great affinity with them, our staff has the ability to catch even the smallest disease or discomfort of our animals; when necessary our employees try through natural remedies or, when things become harder, our veterinary gives the right pharmacological cures and takes note on the holding register so that any sanitary authority could control and certify our deeds, thus guaranteeing the respect of suspension times. The local health authority (called A.S.L.) carries out periodically (at least two times a year) pidemiological and wellness controls on the cattle, by sampling and empirical observations, thus ensuring the quality of our rearing.
Furthermore many controls by weight occur; each animal has an auricular containing the information about the origin, the sex, the belonging to the holding, and is therefore recorded into the national data base (National cattle register), the responsible organ for the meat traceability.
The newborn remain with the mother until the age of 6/7 months into wide and airy stables, having access even to open spaces for pasturing; they also have a reserved area where they can eat their meal with no concurrence/pressure of adult animals or of breeding cows. After 7 months they would be ablactated from mothers and enter the feeding stables compliant to EU laws in small groups and begin a growing phase until the age of 10/11 months with a gradual feed proportional to their growth and feeding needs. After they reach the age of 11 months they begin a new feeding phase until the weight of 600 Kg, which is to say their full development by weight and by muscles, for a good yield. The last phase of relaying is the final fattening period, almost 30/40 days aiming to reach the relaxing and wellness of the cattle reserving four square meters for each animal minimum, training them of being loaded and getting on transport vehicles, to keep contact with human beings so to reduce at the minimum their stress at the moment when they’ll leave the farm. Last but not least, the carbohydrates of their feeding would be increased to the detriment of vegetal proteins thus improving the ageing of the meat.
Even water keeps a special place in this process; actually it should be of very high quality and microbiologically pure.

Being associated to this cooperative allows us to label our products according the CE regulations 1760/2000 of the EU Parliament and Council of the 17th/07/2000, 1825/2000 of the EU commission of the 25th/08/2000 and of the ministerial Decree of the 30th/08/2000, circular n. 1 of the 15th/02/2008. The controls of official veterinarians prove the health and suitability of our meat, whereas a sanitary marking identifies the slaughter-house and the cutting plant on each half-carcase and label in case of confectioned meat
